Ingredients
- 8-10 medium onions
- 4 tablespoons grated processed cheese
- 4 tablespoons olive oil
- Salt to taste
- 1/2 teaspoon black pepper powder
- 1/4 medium red capsicum
- 1/4 medium green capsicum
- 1/4 medium yellow capsicum
- 8-10 garlic cloves
- 1 teaspoon sugar
- 2 teaspoons vinegar
Method
- Preheat oven to 180°C. Heat 2 tbsps olive oil in a non stick pan. Quarter onions and separate some layers and add to the pan. Add salt and pepper powder and sauté.
- Cut red, green and yellow capsicums into ½ inch pieces and put them in a baking dish. Drizzle the remaining olive oil over and sprinkle 2 tbsps grated cheese.
- Add garlic to the onions along with sugar and mix. When the onions are lightly browned, add vinegar and mix. Transfer the mixture into the baking dish over the capsicums.
- Sprinkle the remaining cheese on top and bake in the preheated oven till the cheese gets nicely browned. Serve hot.
