Ingredients list for Baingan Tikki With Masala Gravy
- 1 large Brinjal sliced
- 1 cup gram flour
- 1/2 teaspoon Carom seeds
- to taste Salt
- to deep fry Oil
- For Gravy
- 4 tablespoons Oil
- 1 teaspoon Cumin seeds
- 2 medium Onions chopped
- 2 teaspoons Ginger-garlic paste
- 1 teaspoon Chilli powder
- 2 teaspoons Coriander powder
- 1/4 teaspoon Turmeric powder
- 1 cup Fresh tomato puree
- a pinch Sugar
- to taste Salt
- 3 tablespoons Fresh cream
- 2 tablespoons Fresh coriander chopped
Method
- In a mixing bowl, add gram flour, carom seeds, salt. Add sufficient water and mix well till smooth.
- Heat sufficient oil in a kadai. Dip the sliced brinjal in the gram flour batter and fry them till golden brown. Drain them on an absorbent paper and keep aside.
- For gravy, heat oil in a non-stick pan. Add cumin seeds. Once they start to change the colour, add onion and sauté till it turns golden brown. Add the ginger-garlic paste, chilli powder, coriander powder, turmeric powder and 1 cup of water. Lower the heat and cook for 4-5 minutes.
- Add tomato puree and cook till oil is separated.
- Add fried brinjals, sugar, salt, mix well and let it cook for 3-4 minutes on low flame.
- Add the fresh cream and mix well. Serve hot garnished with coriander.
