Ingredients list for Baingan Tikki With Masala Gravy

  • 1 large Brinjal sliced
  • 1 cup gram flour
  • 1/2 teaspoon Carom seeds
  • to taste Salt
  • to deep fry Oil
  • For Gravy
  • 4 tablespoons Oil
  • 1 teaspoon Cumin seeds
  • 2 medium Onions chopped
  • 2 teaspoons Ginger-garlic paste
  • 1 teaspoon Chilli powder
  • 2 teaspoons Coriander powder
  • 1/4 teaspoon Turmeric powder
  • 1 cup Fresh tomato puree
  • a pinch Sugar
  • to taste Salt
  • 3 tablespoons Fresh cream
  • 2 tablespoons Fresh coriander chopped


  1. In a mixing bowl, add gram flour, carom seeds, salt. Add sufficient water and mix well till smooth.
  2. Heat sufficient oil in a kadai. Dip the sliced brinjal in the gram flour batter and fry them till golden brown. Drain them on an absorbent paper and keep aside.
  3. For gravy, heat oil in a non-stick pan. Add cumin seeds. Once they start to change the colour, add onion and sauté till it turns golden brown. Add the ginger-garlic paste, chilli powder, coriander powder, turmeric powder and 1 cup of water. Lower the heat and cook for 4-5 minutes.
  4. Add tomato puree and cook till oil is separated.
  5. Add fried brinjals, sugar, salt, mix well and let it cook for 3-4 minutes on low flame.
  6. Add the fresh cream and mix well. Serve hot garnished with coriander.
