Ingredients
- 1 large brinjal, roasted and peeled
- 1/2 cup soya granules, soaked
- 2 tablespoons oil
- 1/4 teaspoon onion seeds (kalonji)
- 1 teaspoon cumin seeds
- 2 inch ginger pieces, finely chopped
- 2 medium onions, finely chopped
- 3 medium tomatoes, finely chopped
- 1 1/2 teaspoons red chilli powder
- 1/4 teaspoon turmeric powder
- Salt to taste
- 3 tablespoons finely chopped fresh coriander leaves
- Fresh mint leaves for garnish
Method
- Roast the brinjal over direct flame till the skin gets charred. Cool, peel and finely chop or mash it.
- Heat oil in a non stick kadai. Add kalonji, cumin seeds, ginger, green chillies, onions and sauté lightly.
- Add tomatoes and cook till pulpy. Add red chilli powder, turmeric powder, salt, brinjal, soya granules, ¼ cup water and mix well.
- Cook till the soya granules are cooked.Add coriander leaves and mix.
- Transfer into a serving bowl, garnish with mint leaves and serve hot
