Ingredients
- 1 large brinjal, roasted & peeled with crown intact
 - ½ cup soya granules, soaked
 - 1 medium onion
 - 2 tbsps oil
 - 1 tbsp cumin seeds
 - 2-3 medium tomatoes, chopped
 - Salt to taste
 - 1½ tsps red chilli powder
 
Method
- Chop the onion.
 - Heat oil in a non-stick pan.
 - Remove the crown from the roasted brinjal and finely chop it. Keep aside the crown.
 - Add cumin seeds and chopped onion to the pan. Sauté till onion is light brown.
 - Add tomatoes and mix well. Add salt and mix well. Add the brinjal crown and mix again.
 - Drain the soya granules and add. Mix well.
 - Add chopped roasted brinjal and mix well. Add red chilli powder, mix and cook for 3-4 minutes.
 - Serve hot.
