Ingredients list for Apricot Pound Cake
- 1/2 cup Canned apricots
- Refined flour
- 3/4 cup Canned apricots
- 2 cups Butter
- 2 cups Sugar
- 5 Eggs
- 1 tablespoon Vanilla essence
- 2 cups Refined flour (maida)
- 1 teaspoon Baking powder
- 1/2 cup Milk
Method
- Preheat oven to 180°C.
- Place butter in a bowl, add sugar and beat with a hand blender. Break 2 eggs into the bowl and beat. Break 3 more eggs into the bowl and continue to beat.
- Add vanilla essence and beat some more. Sieve together refined flour and baking powder into the bowl and mix with a spoon first. Then beat with a hand blender. Add milk and mix well.
- Add both the apricots and mix well. Pour the batter into a silicon cake mould and bake in the reheated oven for 40 minutes. Let it cool, then take it out of the mould.
- Cut into slices and serve.
