Ingredients
- 2 medium apples cored, peeled and sliced
- 2 cups cranberries dried
- 150 grams castor sugar (caster sugar)
- 2 star anise
- 4 green cardamom pods, crushed
- Salt to taste
- Black pepper powder to taste
- 1 cup port wine
- 1 medium orange
- 1 cup orange juice
Method
- Put sugar in a non-stick pan, add star anise and cardamoms and cook till the sugar caramelizes.
- Add cranberries and mix well and cook till soft.
- Add apples, mix well and cook for two to three minutes. Add salt and pepper powder and mix well.
- Add port wine, mix well and cook for five to ten minutes.
- Grate rind of entire orange into the pan. Add orange juice, mix well and cook till the mixture thickens.
- Transfer the compote into an airtight container and use as required within seven days.
