Ingredients for Apple Strudel Muffins Recipe

  • Apple chopped 1½ cups

  • Refined flour (maida) 1 cup + 2 tablespoons

  • Butter ½ cup + 1 tablespoon

  • Castor sugar (caster sugar) ¾ cup

  • Eggs 2

  • Vanilla essence 1¼ teaspoons

  • Baking soda ½ teaspoon

  • Baking powder 1 teaspoon

  • Cinnamon powder ½ teaspoon

  • brown sugar/jaggery ? cup

  • Icing sugar for dusting


Step 1

Preheat oven to 180ºC. Line a baking tray with individual silicon muffin moulds.

Step 2

Cream together ½ cup butter and castor sugar in a bowl till light. Add eggs and beat until smooth.

Step 3

Add 1 tablespoon flour to apples and mix. Set aside.

Step 4

Add vanilla essence to butter-sugar mixture and mix.

Step 5

Sift together 1 cup flour, baking soda and baking powder into the butter-sugar mixture. Add ¼ teaspoon cinnamon powder and fold well.

Step 6

Add floured apples and mix well.

Step 7

Take brown sugar in a bowl. Add 1 tablespoon flour, remaining cinnamon powder and 1 tablespoon butter and mix till the mixture resembles coarse crumbs.

Step 8

Fill in the muffin moulds with the prepared apple mixture and top with the brown sugar crumbs. Put the tray in the preheated oven and bake for 15-20 minutes. Remove from oven, cool and demould.

Step 9

Dust with icing sugar and serve.
