Ingredients list for Apple Strudel Muffins
- 1½ cups Apple chopped
- + 2 tablespoons Refined flour (maida) 1 cup
- 1 tablespoon Butter ½ cup +
- ¾ cup Castor sugar (caster sugar)
- 2 Eggs
- 1¼ teaspoons Vanilla essence
- ½ teaspoon Baking soda
- 1 teaspoon Baking powder
- ½ teaspoon Cinnamon powder
- ? cup brown sugar/jaggery
- for dusting Icing sugar
Method
- Preheat oven to 180ºC. Line a baking tray with individual silicon muffin moulds.
- Cream together ½ cup butter and castor sugar in a bowl till light. Add eggs and beat until smooth.
- Add 1 tablespoon flour to apples and mix. Set aside.
- Add vanilla essence to butter-sugar mixture and mix.
- Sift together 1 cup flour, baking soda and baking powder into the butter-sugar mixture. Add ¼ teaspoon cinnamon powder and fold well.
- Add floured apples and mix well.
- Take brown sugar in a bowl. Add 1 tablespoon flour, remaining cinnamon powder and 1 tablespoon butter and mix till the mixture resembles coarse crumbs.
- Fill in the muffin moulds with the prepared apple mixture and top with the brown sugar crumbs. Put the tray in the preheated oven and bake for 15-20 minutes. Remove from oven, cool and demould.
- Dust with icing sugar and serve.
