Ingredients
- 16 green grapes seedless
- 18 black grapes seedless
- 8 prawns shelled and deveined
- 2 tablespoons olive oil
- 1 teaspoon soy sauce
- to taste Salt
- ½ teaspoon crushed red chillies
- 2 teaspoons honey
- ½ lemon
- Micro greens to garnish
Method
- On each skewer skew a green grape, wrap a prawn around a black grape and pass the skewer through them and end with another green grape.
- Heat olive oil in a non-stick pan. Meanwhile halve the remaining black grapes and put into a mixer jar and grind into a puree.
- Transfer the puree into a bowl, add soy sauce, salt and crushed red chillies and mix well.
- Place the skewers with grapes and prawns in the pan of hot oil, sprinkle some salt and cook, rotating the skewers a few times, till the prawns are evenly cooked all around. Transfer the prawns onto a plate.
- Add the spicy black grape puree into the pan, add a little salt, honey and squeeze the juice of ½ lemon and mix well and cook till it gets a sauce consistency. Strain the sauce into a small bowl.
- Arrange the prawn skewers on a serving platter, drizzle a little sauce over them, garnish with some micro greens and serve immediately.
