Ingredients
- 500 grams chicken wings
- 2-inch ginger
- 7-8 garlic cloves
- 5-6 fresh coriander sprigs
- 10-12 fresh coriander stems
- Salt to taste
- 4-5 dried red chillies soaked in hot water
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon honey
- Iceberg lettuce as required
- Alfalfa sprouts for garnishing
Method
- Roughly chop ginger and garlic and put them in a mixer jar. Add coriander sprigs, coriander roots, salt, soaked dried chillies and a little water and grind to a fine paste. Transfer into a bowl.
- Add olive oil, lemon juice and honey and mix well. Add chicken wings and mix well and set aside to marinate overnight or for at least 4 hours in the refrigerator.
- Preheat the air fryer to 200º C.
- Place marinated chicken wings in the air fryer basket, drizzle some of the marinades over them, fit the basket to the fryer and cook for 10-12 minutes.
- Roughly tear lettuce leaves and make a bed on a serving platter. Place the air-fried chicken wings over the lettuce, garnish with alfalfa sprouts and serve immediately.
