Ingredients
- 6-8 cherry tomatoes, halved
- 1 tablespoon olive oil
- 1 tablespoon chopped garlic
- 1 cup Mixed green and yellow zucchini, cut into strips and soaked
- 1 medium onion, finely chopped
- Salt to taste
- Black pepper powder to taste
- 1 small carrot, cut into thin strips
- 2 tablespoons fresh cream
- 1/2 tablespoon parmesan cheese powder
- 5-7 basil leaves + for garnish
- Parmesan cheese shavings for garnish
Method
- Heat olive oil in a non-stick pan. Add garlic and sauté till golden. Add onion and sauté till translucent. Add cherry tomatoes, mix and cook for a minute.
- Add salt, pepper powder, mix and cook for a minute. Add zucchini strips and carrot strips, mix and cook for a minute.
- Add cream and mix well. Switch off heat, add parmesan cheese powder and torn basil leaves and mix well.
- Serve hot garnished with parmesan cheese shavings and basil leaves.
