Zucchini Pasta

Zucchini strips tossed with assorted vegetables, fresh cream and fresh basil leaves. Pasta is replaced with zucchini in this recipe. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 6-8 cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 1 tablespoon chopped garlic 
  • 1 cup Mixed green and yellow zucchini, cut into strips and soaked
  • 1 medium onion, finely chopped
  • Salt to taste
  • Black pepper powder to taste
  • 1 small carrot, cut into thin strips
  • 2 tablespoons fresh cream
  • 1/2 tablespoon parmesan cheese powder
  • 5-7 basil leaves + for garnish
  • Parmesan cheese shavings for garnish

Method

  1. Heat olive oil in a non-stick pan. Add garlic and sauté till golden. Add onion and sauté till translucent. Add cherry tomatoes, mix and cook for a minute.
  2. Add salt, pepper powder, mix and cook for a minute. Add zucchini strips and carrot strips, mix and cook for a minute.
  3. Add cream and mix well. Switch off heat, add parmesan cheese powder and torn basil leaves and mix well.
  4. Serve hot garnished with parmesan cheese shavings and basil leaves.
