How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Wholesome Khichadi Recipe

  • Rice (Ambe Mohar) 2/3 cup

  • Split Green Gram Skinless 2/3 cup

  • Ghee 2 tablespoons

  • Cumin seeds 1 teaspoon

  • Asafoetida 1/2 teaspoon

  • Black peppercorns 6-8

  • Bay leaves 2

  • Cloves 4

  • Bottle gourd (lauki/doodhi) grated 1 cup

  • Carrot grated 1 cup

  • Turmeric powder 1/2 teaspoon

  • Salt to taste

Method

Step 1

Soak the rice and moong dal for fifteen to twenty minutes. Drain and keep aside. Heat ghee in a pressure cooker and add cumin seeds. Once they change colour, add asafoetida, peppercorns, bay leaves and cloves and sauté till fragrant.

Step 2

Add bottle gourd and carrot and sauté for another four to five minutes. Add dal, rice, turmeric powder, salt and four cups of water cook under pressure till three whistles are given out.

Step 3

Serve hot with fresh yogurt.
