Ingredients list for Watermelon and Shrikand Bites

  • 20-25 Watermelon 1-inch
  • 1/2 cup Hung Yogurt
  • A few saffron strands
  • 3 tablespoons Rose syrup
  • a pinch Black pepper powder
  • 1/2 teaspoon Green cardamom powder
  • 1 tablespoon Cream cheese
  • 4 tablespoons Powdered sugar
  • for garnishing Fresh mint leaves

Method

  1. Dissolve saffron in 2 tbsps warm water.
  2. Mix together watermelon cubes, rose syrup, black pepper powder and ¼ tsp green cardamom powder in a bowl.
  3. To make the topping, mix together hung curd, cream cheese, sugar, saffron along with the water and the remaining green cardamom powder in another bowl. Transfer the topping into a piping bag with a star nozzle.
  4. Arrange the watermelon cubes onto a serving plate. Pipe the topping over the watermelon cubes. Top it with mint leaves. Pierce each piece with a toothpick and serve.
