Ingredients list for Walnut Raisin Cookies
- 80 grams Walnuts toasted and chopped
- 30 grams Raisins
- 200 grams Refined flour (maida)
- 110 grams Castor sugar (caster sugar)
- 200 grams Butter diced
- a pinch Salt
- a few drops Vanilla essence
- as required Egg wash
Method
- Preheat oven at 175°C. Cream together sugar and butter in cake batter mixer at a low speed till ingredients are well combined. Increase the speed and blend till the mixture is light and fluffy. Add salt and vanilla essence and blend for 4-5 minutes on medium speed.
- Add flour in batches and fold in using a spatula. Combine till all the flour is mixed with the butter-sugar mixture.Add raisins and walnuts and mix well.
- Place a piece of butter paper on a worktop and put a portion of the dough on it. Roll into a cylinder. Refrigerate for 2 hours.Brush the cookie dough cylinder with an egg wash and sprinkle sugar on it. Roll so that the dough is coated with the sugar.
- Cut the cylinder into medium thick roundels. These are the cookies. Place a butter paper on a baking tray and put the cookies on it. Spread egg wash on cookies. Put the baking tray in preheated oven and bake for 10-12 minutes. Remove from heat, cool and serve.
