Ingredients for Vegetables In Noodle Basket Recipe

  • Mixed Vegetables 4-5

  • Roasted Peanuts 1 inch pieces 1 large

  • Button mushrooms quartered 5

  • Green capsicum 1 inch cubes 1 medium

  • Red capsicum 1 inch cubes 1 medium

  • Chinese cabbage cut into thick strips 1/2 small

  • Chilli oil 3 tablespoon

  • Whole dry red chillies broken 5-6

  • Garlic paste 1/2 tablespoon

  • Ginger paste 1/2 tablespoon

  • Spring onions chopped 2

  • Dark soy sauce 2 tablespoons

  • Vegetable stock 1/2 cup

  • Salt to taste

  • Sugar 2 teaspoon

  • Cornflour/ corn starch blended with half cup of water 2 tablespoons

  • Roasted peanuts 1/4 cup

Method

Step 1

Heat two tablespoons of chilli oil in a wok. Add broken red chillies, garlic paste, ginger paste, chopped spring onions and sauté.

Step 2

Add baby corns, carrot, button mushrooms and sauté. Add dark soy sauce and continue to sauté. Add vegetable stock, salt, sugar and mix.

Step 3

Add dissolved cornflour. Add green and red capsicums, roasted peanuts, Chinese cabbage leaves and mix. Add a little more stock if required. Mix and take off the heat. Do not overcook. Serve hot in a basket of noodles garnished with the remaining chilli oil.
