By Sanjeev Kapoor 24 Mar 2021 in Recipes Course New Update Advertisment Main Ingredients Vegan semi-sweet chocolate chunks, Refined flour Cuisine Fusion Course Snacks and Starters Prep Time 31-40 minutes Cook time 11-15 minutes Serve 4 Taste Sweet Level of Cooking Easy Others Veg Ingredients list for Vegan Chocolate Chip Cookies 2/3 cup Vegan semi-sweet chocolate chunks 1 1/2 cups Refined flour 1 cup Dark brown sugar 1/2 cup Castor sugar 1/2 cup Coconut oil 1/2 cup Soy milk 1 teaspoon Vanilla essence 1 teaspoon Salt 1/2 teaspoon Baking soda Method Put dark brown sugar in a planetary mixer bowl, add castor sugar and coconut oil and process with the whisk attachment till well combined. Add the soy milk, gradually and keep processing. Add vanilla essence and process till sugar dissolves. Dislodge the whisk attachment, and keep a sieve over the bowl. Put flour, salt and baking soda into the sieve and sift the mixture into the mixer bowl. Attach the hook attachment and process till the dough comes together. Be careful not to over mix. Add chocolate chunks and process to make a dough. Refrigerate the dough for 30 minutes. Preheat the oven to 180˚C. Line a baking tray with a silicon mat. With an ice cream scoop take the dough and place the scoops on the prepared tray keeping at least 2 inches distance between each. Keep the tray in the preheated oven and bake for 12-15 minutes. Bring the tray out of the oven and let the cookies cool down to room temperature.
