Remove the seeds and slice as thinly as possible. Combine the chopped mint, garlic, caster sugar and yogurt in a bowl. Mix the cucumbers with the yogurt. Add salt to taste. Serve chilled, garnished with a sprinkling of paprika and the sprig of mint.
