Ingredients
- 2 medium tomatoes, seeded and cut into large chunks
- 2 medium potatoes, boiled, peeled and cut into 1-inch cubes
- 1 large green capsicum, cut into large chunks
- 2 thick fresh pineapple slices, chopped
- 1 large apple, unpeeled cored and chopped
- 2 celery stalks, chopped
- 1/2 cup thousand island dressing
- Salt to taste
- Black pepper powder to taste
- 2 lettuce leaves
Method
- Combine the tomatoes, potatoes, capsicum, pineapple, apple and celery in a large mixing bowl. Add the Thousand Island dressing and mix well.
- Add salt to taste and the pepper powder. Place in a refrigerator to chill. Serve on a bed of lettuce.
