Ingredients list for Tomato, Coconut mix Chutney
- 2 medium Tomato diced
- 1/4 cup Coconut grated
- 1 teaspoon Oil
- 1 medium Onion, diced
- 2 cloves Garlic, crushed
- 2 Whole dry red chillies
- 1/3 cup coriander leaves, chopped
- to taste Salt
Method
- Heat oil in a non stick pan. Add garlic and whole red chillies, saute well for half a minute.
- Add onions and saute till soft. Add tomatoes and salt. Mix well and cook for five minutes till tomatoes are soft.
- Add coconut and coriander leaves. Mix well. Saute for five minutes. Remove from heat. Allow it to cool and blend in the blender till smooth.
