Ingredients list for Tangy Thyme Chicken

  • 2 Boneless chicken breasts
  • 1 teaspoon Orange juice ½ cup +
  • for garnishing Thyme sprigs 2,3 +
  • to taste Salt
  • 2 teaspoons Fennel seeds (saunf) roasted and crushed
  • to taste Black pepper powder
  • 1 tablespoon Butter
  • 1 teaspoon Olive oil ½ tablespoon +
  • 1 tablespoon Honey
  • 1½ teaspoons Red chilli powder
  • for garnishing Orange segments

Method

  1. Put ½ cup orange juice, salt, fennel seeds and pepper powder in a bowl. Add chicken, mix well and set aside to marinate for 1 hour.
  2. Preheat oven to 180ºC.
  3. Heat butter and ½ tablespoon olive oil in a non-stick pan. Place the marinated chicken in it and serr till light brown from both the sides.
  4. Put honey, pepper powder and fresh thyme in a bowl and mix well. Add red chilli powder and mix well. Add 1 teaspoon orange juice and 1 teaspoon olive oil and mix well.
  5. Place seared chicken on a baking tray, pour the honey mixture on top, put tray in preheated oven and bake for 15 minutes or till the chicken is fully cooked.
  6. Serve hot garnished with orange segments and thyme sprig.
