Ingredients list for Sweet Rice in Banana Leaf

  • 1 cup Cooked Rice
  • 1 Scraped Fresh Coconut cut into 4 pieces
  • 2 tablespoons Ghee
  • 3 tablespoons Raisins
  • 3/4 cup Scraped coconut
  • 1/2 cup Brown sugar
  • 1/4 cup Coconut milk
  • 1/4 teaspoon Green cardamom powder
  • 1 teaspoon Oil

Method

  1. Heat ghee in a non-stick pan, add raisins and sauté till lightly browned.
  2. Put rice in a bowl, add sautéed raisins and mix well.
  3. Heat the same pan, add coconut, brown sugar and coconut milk and mix well. Cook for 3-5 minutes. Add this mixture to the rice and mix well. Add cardamom powder and mix well.
  4. Discard the veins of banana leaves, halve lengthwise and soften by placing on direct flame.
  5. Place a portion of the rice mixture on one side of each leaf and wrap to make a packet.
  6. Heat oil in a non-stick pan, place the packets on it and cook till the underside is browned, flip and cook on the other side too.
  7. Place them on a serving plate, unwrap one of the packets and serve immediately.
