Ingredients list for Suran Ki Khichdi
- 400 grams grams Yam grated
- 1/4 cup cup Peanuts
- 3 tablespoons Ghee
- 1 teaspoon Cumin seeds
- 2 Cloves
- 1 inch stick Cinnamon
- 3-4 Peppercorns
- 6-8 Curry leaves
- 1 inch piece Ginger finely chopped
- 3 Green chillies finely chopped
- to taste Salt
- 1 teaspoons Sugar
- 1 tablespoon Sugar
- a few sprigs Fresh coriander leaves finely chopped
Method
- Dry roast peanuts with skin. When cool, remove skin and grind to a coarse powder. Heat ghee in a thick-bottomed vessel, add cumin seeds, cloves, cinnamon, peppercorns and curry leaves and sauté for a minute.
- Add ginger and green chillies and fry for half a minute. Add grated yam, salt and two cups of water and bring to a boil.
- Reduce heat and cover and cook on low heat till yam is soft. Add peanuts, sugar and lemon juice.
- Mix well and cook further for ten minutes till done. Mash lightly using a spoon. Serve hot garnished with coriander leaves.
