Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Stromboli Recipe

  • Mushrooms sliced 5-6 medium

  • Cheese slices 4

  • Egg 1

  • Milk 4 tablespoons

  • Bread dough to make one loaf

  • Onion 2 medium

  • Red capsicum 2 medium

  • Tomato ketchup as required

  • Salt to taste

  • Black pepper powder to taste

  • Fresh parsley 1 tablespoon

  • Parmesan cheese 1 tablespoon

  • Fresh oregano a pinch


Step 1

Preheat the oven to 160°C.Grease the baking sheet.

Step 2

Beat the egg and mix it with milk to give the bread an egg-milk wash.Punch out the air bubbles in the bread dough.

Step 3

Roll into a large rectangle on a slightly floured surface.Brush with the egg-milk wash.

Step 4

Place the cheese slices in the middle one third of the rectangle.Mix the other filling ingredients together and place over the cheese slices.

Step 5

Fold in the other one thirds of the rectangle over the center.Brush with the remaining egg-milk wash.

Step 6

Sprinkle with parmesan cheese and oregano.Place on the greased baking sheet and place it in the preheated oven.

Step 7

Bake for twenty minutes or till the top is slightly browned.Take it out and placed on a rack to cool before slicing.
