Strawberry Cheesecake

Ingredients list for Strawberry Cheesecake

  • 1 1/2 cups Graham cracker crumbs
  • 3-4 tablespoons Butter melted
  • 1 tablespoon Castor sugar
  • 1 pinch Salt
  • 1 cup Fresh strawberry sauce
  • to garnish Fresh strawberry slices
  • Cheesecake filling
  • 1 cup Cream cheese at room temperture
  • 2/3 cup Castor sugar
  • 1 1/2 cups Mascarpone cheese
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Lemon juice
  • 1 pinch Salt
  • 1 1/2 cups Whipped cream

Method

  1. Take Graham cracker crumbs in a bowl, add melted butter and mix. Add 1 tbsp castor sugar and salt and continue to mix till the mixture resembles wet sand.
  2. Take cream cheese in another bowl, add sugar, mix till well combined. Beat the mascarpone cheese in a small bowl till smooth. Add it to the cream cheese mixture and fold in gently.
  3. Add vanilla extract, lemon juice and mix well. Add a pinch of salt and mix well.
  4. Add some whipped cream and fold in gently. Add the remaining whipped cream and fold in well. Refrigerate for 5-10 minutes.
  5. To make instant cheesecake, put some of crumb mixture into each stemmed serving glass and press gently. Add dollops of cream cheese mixture and top it with sliced strawberries. Drizzle a little fresh strawberry sauce on top. Sprinkle some crumb mixture on top and serve.
  6. For a classic cheesecake, put the crumb mixture into a spring form cake tin, spread it evenly and press down firmly. Keep the tin in the refrigerator for 10-15 minutes.
  7. Add some fresh strawberry sauce into the cream cheese mixture and mix well. Pour it over the crumb mixture in the cake tin and spread it evenly. Refrigerate till set.
  8. Demould and keep it on a plate. Cut into wedges and keep them on serving plates, drizzle a little strawberry sauce on top and serve immediately.
