Spinach and Cheese Fritters

Cheese cubes wrapped in spinach leaves, dipped in chilled refined flour batter and deep-fried till golden and crisp. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Spinach and Cheese Fritters

  • 1 medium bunch Fresh spinach leaves (palak)
  • 100 grams Processed cheese
  • for deep-frying Oil
  • 1/2 cup Refined flour (maida)
  • to taste Salt
  • to taste White pepper powder

Method

  1. Heat sufficient oil in a kadai.
  2. Blanch spinach leaves in hot water. Transfer immediately into ice cold water to refresh.
  3. Cut cheese into medium cubes.
  4. Take refined flour in a bowl. Add salt and pepper powder and mix well. Add some ice cold water and mix well to make a one string consistency batter. Set aside.
  5. Place spinach leaves on the worktop. Put one cheese cube on a spinach leaves and wrap it.
  6. Coat each fritter with the prepared batter and deep-fry in hot oil. Drain on absorbent paper.
  7. Double fry the fritters again in the same hot oil till golden and crisp. Drain on absorbent paper.
  8. Serve hot garnished with mint sprigs.
