Ingredients list for Rice Pudding with Dried Fruit Compote

  • 1 litre Milk
  • 2 tablespoons Rice
  • 15-20 Dried apricots chopped
  • 15-20 Dried figs chopped
  • 15-20 Prunes chopped
  • 2 one-inch Cinnamon sticks
  • 3 tablespoons Sugar
  • 1/2 teaspoon Vanilla essence

Method

  1. Pour milk into a deep pan, add rice and cook.
  2. Heat a non-stick pan, add dried apricots, figs, prunes and 1½ cups water and mix. Add cinnamon and cook.
  3. Add 3 tbsps sugar to milk-rice mixture and cook till rice is fully cooked and the mixture thick. Cool.
  4. Put a scoop of kheer in martini glasses.
  5. Add vanilla essence to the fruits and mix. Put the fruit compote over the kheer and serve.
