Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Red Pumpkin Crushed Pepper Recipe

  • Red Pumpkin peeled, cut into fingers and pricked 500 grams

  • Crushed Peppercorns 1 1/2 teaspoons

  • Oil 5 tablespoons

  • Garlic cloves 12-15

  • Salt to taste

  • Juice of 1 lemon

  • Fresh coriander leaves roughly chopped 1 cup

  • Vinegar 3 tablespoons

  • Mustard paste 1 teaspoon


Step 1

Heat 2 tbsps oil in a non-stick pan. Mash the garlic cloves and add to the pan and sauté till the garlic becomes golden and crisp.

Step 2

Add red pumpkin, 1 tsp crushed black peppercorns, salt, lemon juice and mix well. Cover and cook for 5-7 minutes or till the pumpkin is cooked.

Step 3

To make the dressing, grind together coriander leaves, remaining crushed black peppercorns, vinegar, mustard paste, salt and remaining oil.

Step 4

Arrange the pumpkin fingers on a serving plate. Pour the dressing over them and serve.
