Ingredients
- 1 cup quinoa, cooked
- 1 medium sweet potato, boiled, peeled and cut into small pieces
- ½ cup orange segments
- ½ cup roasted walnuts
- 8-10 baby arugula leaves
- Juice of 1 lemon
- Salt to taste
- Crushed black peppercorns to taste
Method
- Take quinoa in a bowl. Add walnuts, orange, arugula leaves and sweet potato pieces and mix well.
- Add lemon juice, salt and crushed peppercorns and mix well.
- Serve immediately.
