How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Poha Kheer Recipe

  • Pressed rice (poha) ½ cup

  • Milk 1½ cup

  • Ghee 1 tablespoon

  • Raisins 6-7

  • Cashewnuts 6-7

  • Sugar ¼ cup

  • Green cardamom powder ¼ teaspoon


Step 1

Heat ghee in a non-stick pan, add raisins and cashew nuts and sauté till golden. Remove from the pan and set aside.

Step 2

Add pressed rice to the same pan and sauté for two to three minutes. Add milk and cook, stirring continuously, till the pressed rice is cooked and the mixture thickens.

Step 3

Add sugar, mix well and cook till sugar dissolves completely.

Step 4

Add cardamom powder, fried raisins and cashew nuts and mix well.

Step 5

Serve warm.
