Ingredients list for Poached Fried Eggs-Cook Smart

  • 5 Eggs
  • 2 Medium onions
  • 2 teaspoon to shallow fry Oil
  • 2 Spicy chicken sausages
  • 1 Green capsicum seeded and cut into strips
  • 1 tablespoon Sweet red chilli sauce
  • to taste Salt
  • 1 teaspoon Vinegar
  • 1 1/2 cups Fresh breadcrumbs
  • to taste Black peppercorns crushed
  • 4-5 Iceberg lettuce leaves

Method

  1. Heat 2 teaspoons oil in a non-stick pan, add onions and saute well.
  2. Slice sausages.
  3. Add capsicum strips and sausages to the pan and toss. Add chilli sauce and salt and toss well.
  4. Heat sufficient water in a deep non-stick pan.
  5. Transfer sausage mixture into a bowl and cool down to room temperature.
  6. Break 1 egg into a bowl. When the water in the pan comes to a boil, add salt and vinegar. Whisk the boiling water slightly so that it moves in circular fashion. Slide the egg immediately into it.
  7. Let it poach for 3-4 minutes. Gently remove the egg from the water with a slotted spoon and keep on a plate to cool. Remember not to cook the egg fully because the yolk should remain a little runny. Poach 3 more eggs similarly. Chill the eggs in the refrigerator.
  8. Break remaining egg into a plate, add salt and mix well.
  9. Heat sufficient oil in another non-stick pan.
  10. Spread breadcrumbs on a plate. Add salt and mix.
  11. Add crushed peppercorns to the egg and mix well. Dip poached eggs in it and coat with the breadcrumbs gently without pressing the egg.
  12. Gently place the coated poached eggs on the pan and shallow-fry, turning sides gently, till golden and crisp on both the sides.
  13. Tear lettuce leaves and place on a serving dish. Put some of the cooked sausage mixture on it, place the poached fried eggs on it and top with remaining sausage mixture.
  14. Serve immediately.
