History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Pista Roll Recipe

  • Pistachios 1 1/2 cups

  • Sugar 2/3 cups

  • Liquid glucose 1 tablespoon

  • Ghee 1 tablespoon

  • Silver warq

Method

Step 1

Blanch, drain and peel the pistachios. Roast them in the oven and then powder coarsely. Cook the sugar with one and one third cups of water in a deep non-stick pan over medium heat till the syrup reaches 118°C/ 244°F, or till it attains a multi-string consistency.

Step 2

Stir in the liquid glucose and ghee.

Step 3

Remove the pan from the heat and add the pistachio powder, stirring continuously. Knead lightly to make a soft dough.

Step 4

Divide the mixture into two equal portions and roll them out as thinly as possible. Roll each one up into a long cylinder and cut into one-inch pieces.

Step 5

Decorate with chandi ka varq and arrange the rolls on a platter. Place in a refrigerator to set for an hour before serving. Makes 350 grams
