Pista Barfi

Barfi or burfi is a dense milk based sweet confectionery. The name is a derivative of the Persian word barf, which means snow. Try out this pista snowy delight. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Pista Barfi

  • 2 cups Pistachio powder
  • 1 1/2 tabl to grease Ghee
  • 3/4 cup Sugar
  • 1/2 tablespoon Milk
  • 2 tablespoons Liquid glucose
  • to garnish Silver warq

Method

  1. Grease a barfi tray with some ghee.
  2. Heat sugar with ¼ cup water in a non-stick pan, stirring till the sugar dissolves.
  3. Add milk, stir and discard the scum that rises to the surface. Cook till the syrup thickens slightly.
  4. Add liquid glucose and mix till well combined. Add ghee and mix well.
  5. Add pistachio powder, mix well till the mixture comes together to form a lump. Transfer the mixture into a bowl and let it cool slightly. Apply ghee on your palms and knead the mixture slightly.
  6. Spread this mixture on the barfi tray and spread evenly. Apply some ghee on a rolling pin and roll on the surface to make it even.
  7. Garnish with silver varq and let it set at room temperature.
  8. Cut into diamonds, arrange them on a serving platter and serve.
