Ingredients 

  • 1 1/2 cups dates, stoned and halved
  • 1/2 cup brown sugar/jaggery
  • 1 1/2 teaspoon salt
  • 2 cups vinegar
  • 4-5 cloves
  • 3 bay leaves
  • 2 star anise
  • 2 inch stick cinnamon

Method

  1. Heat one cup of water in a non-stick pan. Add brown sugar and salt and stir till the sugar gets dissolved.
  2. Stir in vinegar and mix well. Take it off the heat.
  3. Tie up the cloves, bay leaves, star anise and cinnamon in a muslin cloth.
  4. Dip the muslin cloth with the spices in the water and let it soak till the water gets cooled.
  5. Place the dates in a glass jar and then pour the spiced water over them so that they are completely covered.
  6. Cover and keep it for two days before using it.
