History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Pickled Dates Recipe

  • Dates stoned and halved 1 1/2 cups

  • brown sugar/jaggery 1/2 cup

  • Salt 1 1/2 teaspoon

  • Vinegar 2 cups

  • Cloves 4-5

  • Bay leaves 3

  • Star anise 2

  • Cinnamon 2 inch stick


Step 1

Heat one cup of water in a non-stick pan. Add brown sugar and salt and stir till the sugar gets dissolved.

Step 2

Stir in vinegar and mix well. Take it off the heat.

Step 3

Tie up the cloves, bay leaves, star anise and cinnamon in a muslin cloth.

Step 4

Dip the muslin cloth with the spices in the water and let it soak till the water gets cooled.

Step 5

Place the dates in a glass jar and then pour the spiced water over them so that they are completely covered.

Step 6

Cover and keep it for two days before using it.
