This recipe is from FoodFood TV channel By Sanjeev Kapoor 17 Nov 2014 in Recipes Course New Update Main Ingredients Penne , Fresh cream Cuisine Italian Course Noodles and Pastas Prep Time 11-15 minutes Cook time 26-30 minutes Serve 4 Taste Sweet & Sour Level of Cooking Moderate Others Veg Advertisment Ingredients list for Pasta Prima Vera 200 grams Penne boiled 2 tablespoons Fresh cream 1/2 Yellow Zucchini 1/2 Green zucchini 5-6 Asparagus 7-8 florets Broccoli 2-3 Tomatoes,blanched 5 tablespoons Extra virgin olive oil 4-5 cloves Garlic to taste Salt 2 tablespoons Pine nuts(chilgoza) a few Parmesan cheese shavings 5-6 Fresh basil leaves Method Advertisment Cut yellow and green zucchini into ¼ inch pieces. Cut the soft tips of asparagus for use and blanch broccoli florets. Halve blanched tomatoes, remove seeds and chop. Heat 2 non stick pans and pour 2 tbsps extra virgin olive oil in each. Crush garlic and add to one pan and sauté for ½ minute. Add pasta and toss. Add both the zucchini, asparagus, tomatoes and a little salt to the other pan and toss. Add pine nuts and salt to the pasta and toss. Add broccoli to the vegetables in the other pan and toss. Switch off the heat. Add cream and parmesan cheese to the pasta and mix well. Switch off the heat. Transfer the pasta onto a serving plate, put the vegetables over it and garnish with basil leaves. Drizzle remaining olive oil over and serve hot.
