Ingredients list for Papaya Coconut Boats
- 1 small Ripe Papaya peeled, seeded and cut into wedges
- 1/2 cup Scraped Fresh Coconut
- 5 Dried red chillies
- 3 Garlic cloves
- 1 Spring onion with greens
- 2 teaspoons Oil
- 1 small Onion finely chopped
- 2 tablespoons Lemon grass (white part only) chopped
- to taste Salt
- 2 teaspoons Brown sugar
Method
- Grind dried red chillies, garlic cloves and spring onion with greens into a smooth paste.
- Heat oil in a non-stick pan, add onions, lemon grass and the ground paste. Mix well and cook for five minutes.
- Lower heat and add coconut, salt and brown sugar. Cook for ten to fifteen minutes, stirring continuously. Remove from heat, cool down to room temperature and grind the mixture to a coarse powder.
- Sprinkle on the papaya wedges and serve.
