Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Paneer Tawa Masala Recipe

  • Cottage cheese (paneer) cut into cubes 200 grams

  • Oil 2 tablespoons

  • Cumin seeds 1 teaspoon

  • Medium onion chopped 1

  • Salt to taste

  • Ginger-garlic paste 1 1/2 tablespoons

  • Medium tomato chopped 1

  • Tomato puree 1/2 cup

  • Green chillies chopped 2-3

  • Green capsicum chopped 1/4 cup

  • Turmeric powder 1/4 teaspoon

  • Garam masala powder 1 tablespoon

  • Coriander powder 1/2 teaspoon

  • Red chilli powder 1 teaspoon

  • Lemon juice 1 teaspoon

  • Fresh coriander sprig to garnish

Method

Step 1

Heat oil in a non-stick pan, add cumin seeds, onion, salt and ginger-garlic paste, mix and sauté till translucent.

Step 2

Add tomato, mix well and saute till tomato turns pulpy. Add tomato puree and mix.

Step 3

Simmer for 2-3 minutes, add green chillies and green capsicum, mix well and saute for 3-4 minutes.

Step 4

Add turmeric powder, garam masala powder, coriander powder and red chilli powder and mix well. Add ½ cup water and mix. Add salt, mix and simmer for 4-5 minutes.

Step 5

Add cottage cheese cubes and mix well. Add lemon juice, mix well and cook for 2-3 minutes.

Step 6

Transfer into a serving bowl, garnish with coriander sprig and serve warm.
