Method

  1. Take whole wheat flour in a mixing bowl, add yogurt, 1 tsp ghee, salt and sufficient water and knead to soft dough. Cover and let it rest for 5-10 minutes.
  2. Divide the dough into equal portions and shape them into balls. Dust some flour on the worktop and roll out each ball into a small disc. Spread ½ tbsp ghee on each disc and sprinkle dry flour. Give a slit from the center to the edge on one side and roll to form a cone. Flatten, dust some more flour and roll out into a thin disc.
  3. Heat a non-stick tawa, roast the paranthe, one at a time, and cook for 30 seconds. Flip, spread a little ghee and spread it evenly. Flip again, drizzle ghee on the other side and spread evenly. Cook, turning sides, till golden brown on both sides. Transfer on a plate and crush lightly to separate layers.
  4. Spread some green chutney on each parantha, place a few pieces of paneer tikka in the center. Sprinkle some onions and sprinkle chaat masala on top and roll.
  5. Place the rolls on individual serving plates and serve with salad and green chutney.
