Till a few years ago, cauliflower used to be a vegetable that is only available during winter but of late cauliflower is available year around especially in big cities. Referred to as the aristocrat of the cabbage family, the flowers are also eaten raw at times. While buying, look for fresh cauliflowers with compact white heads and green fresh looking leaves. Avoid and reject any loose or spread out heads – they are a sure sign of over maturity.

Ingredients for Orange Glazed Vegetables Recipe

  • Cauliflower 1 inch cubes 2 small

  • Broccoli florets 1/2 cup

  • Broccoli florets 1/2 cup

  • French beans 1 inch diamonds 5-6

  • Snow peas 5-6

  • Zucchini 1 inch cubes 1/2 medium

  • Asparagus 5-6

  • Red capsicum 1 inch pieces 1 small

  • Yellow capsicum 1 inch pieces 1 small

  • Green capsicum 1 inch pieces 1 small

  • Baby potatoes 5-6

  • Olive oil 1 tablespoon

  • Ginger thin strips 1/2 inch piece

  • Cornflour/ corn starch 1 tablespoon

  • Orange juice 1 1/2 cups

  • Sea salt to taste

  • Crushed red chillies 1/2 tablespoon


Step 1

Heat olive oil in a deep pan. Add ginger and sauté on high heat. Add carrots and cauliflower and cook for two minutes.

Step 2

Blend cornstarch in orange juice. Add broccoli and French beans to the pan of vegetables. Stir and cook for a minute.

Step 3

Add snowpeas, zucchini, squash and mix. Add sea salt, crushed red chillies and mix. Add asparagus, red, yellow and green capsicums and boiled baby potatoes and mix well. Add orange marmalade and mix. Add cornstarch blended in orange juice and mix.

Step 4

Cook for two to three minutes taking care that the vegetables do not get overcooked and lose their crunchiness.

Step 5

Serve hot with boiled brown rice.
