Ingredients list for Mushroom Avocado Toast

  • 5-6 Dried shiitake mushrooms soaked and sliced
  • 8-10 Shimeji mushrooms sliced
  • 5-6 Button mushrooms sliced
  • 6-8 Oyster mushrooms sliced
  • 1 Large avocado halved and seeded
  • 8 Multigrain bread slices toasted
  • 1 tablespoon Olive oil
  • 2 teaspoons Garlic finely chopped
  • 1 Medium onion finely chopped
  • to taste Salt
  • to taste Black peppercorns crushed
  • 1 tablespoon Balsamic vinegar
  • 1 tablespoon Fresh parsley leaves chopped
  • as required Dijon mustard sauce

Method

  1. Heat olive oil in a non-stick pan, add garlic and sauté for 1 minute. Add onion and sauté till translucent. Add shitake, shimeji mushrooms, button mushrooms and oyster mushrooms and mix. Add salt and crushed black peppercorns, mix and sauté for 3-4 minutes.
  2. Add balsamic vinegar and mix well. Add parsley leaves, mix well and saute for 1 minute. Take it off the heat.
  3. Place the toasted bread slices on a serving plate, apply mustard sauce evenly. Scoop out some avocado flesh, place it on the toasts. Mash it with a fork and spread it evenly. Sprinkle salt and crushed black pepper. Spread a spoonful of the mushroom mixture on each bread slice and serve immediately.
