Ingredients
- 240ml white rum
- 1 cup fresh mint leaves
- 2 lemons, cut into wedges
- ½ cup sugar
- 4 dashes of lemon juice
- Crushed ice as required
- Soda as required
Method
- To make syrup, heat sugar and ½ cup water in a non-stick pan till the sugar melts. Take the pan off the heat and allow the syrup to cool completely.
- To make one portion, put 12-15 mint leaves in a serving glass, add a few lemon wedges, muddle with a muddler.
- Add 25ml of sugar syrup, a dash of lemon juice, 60ml white rum, add crushed ice, and top up with soda. Serve immediately.
