Ingredients for Mixed Vegetable Salad with Lemon Coriander Vinaigr Recipe

  • Green Capsicum cut into thin strips 1 medium

  • Tomatoes seeded and cut into thin strips 2 medium

  • Onions sliced 2 medium

  • Small head iceberg lettuce 1

  • Crushed roasted peanuts 1/3 cup

  • For Dressing

  • Lemon juice 2 tablespoons

  • Fresh coriander stems 8-10

  • Olive oil 6 tablespoons

  • Honey 1 tablespoon

  • Crushed black peppercorns 1 teaspoon

  • Fresh coriander leaves chopped 2 tablespoons

  • Salt to taste


Step 1

Place capsicum and tomatoes in a bowl and add onion, torn iceberg lettuce leaves.

Step 2

To make the dressing, roughly chop coriander stems and place in another bowl. Add olive oil, honey, crushed peppercorns, coriander leaves and salt and mix well.

Step 3

Add dressing to the vegetables and mix well.

Step 4

Garnish with crushed peanuts and serve chilled.
