Drain and cook rice in four to five cups of salted boiling water till done. Drain again and spread on a large plate to cool. Heat ghee in a kadai and add cumin seeds, cloves and cinnamon. When they begin to change colour, add onions and sauté on medium heat for three to four minutes till light pink. Add rice, green peas, fresh mint eaves and coconut and toss to mix well stirring and tossing continuously. Adjust seasoning and continue to sauté for another minute. Serve hot.
