Ingredients list for Madelines
- 1 cup Refined flour (maida)
- 3 Eggs
- ½ cup Sugar
- 2 tablespoons brown sugar/jaggery
- ½ cup Unsalted butter
- 1 teaspoon Vanilla essence
- ½ teaspoon Baking powder
- ¼ teaspoon Salt
- 1 teaspoon Lemon rind
Method
- Preheat oven at 180 ° C.
- Break 3 eggs into a bowl. Add sugar, brown sugar and vanilla essence and beat till the mixture reaches a ribbon stage.
- Put butter in a bowl and melt it in the microwave. Take it out of the microwave and let it cool slightly.
- Sieve refined flour, salt and baking powder into the egg mixture and fold in lightly.
- Add melted butter and lemon rind and mix well.
- Pour the mixture into piping bags and pipe into madeleine moulds.
- Bake in the preheated oven for 10-15 minutes.
- Take the moulds out of the oven, cool down to room temperature and demould. Serve.
