Ingredients for Lobio Recipe

  • Kidney Beans soaked and boiled 200 grams

  • Mushrooms sliced 200 grams

  • Oil 4 tablespoons

  • Bay leaf 1

  • Onions thinly sliced 3 medium

  • Paprika 1 teaspoon

  • Salt to taste

  • Red chilli powder a pinch

  • Tomato puree 2 tablespoons

  • Red capsicum thinly sliced 1 medium


Step 1

Heat oil in a non stick pan, add bay leaf and onions and saute till transluscent. Add mushrooms, kidney beans and the water in which the beans were boiled and mix well.

Step 2

Add paprika, salt and red chilli powder and mix well. Cook for 2 minutes. Add tomato puree and red capsicum and mix well.

Step 3

Cover and cook for 2-3 minutes. Mash coarsely with a hand blender. Serve in a Georgian clay pot.
