Ingredients
- 500 grams baby potatoes, boiled and peeled
- 10-12 dried red chillies, seeded and soaked
- 12 garlic cloves
- Salt to taste
- 3 tablespoons coconut oil
Method
- Put red chillies and 10 garlic cloves in a mixer jar, add a little water and grind to a fine paste.
- Take potatoes in a large mixing bowl, add the ground paste and salt and mix well. Set aside to marinate for 15-20 minutes.
- Heat coconut oil in a non-stick wok. Add potatoes and saute for 2-3 minutes. Cover and cook till moisture dries up and potatoes become dark red.
- Slice 2 garlic cloves.
- Transfer potatoes into a serving dish, garnish with sliced garlic and serve hot.
