Treasure house of vitamins and minerals, spinach must be included in the week's menu. The usage can be varied: chopped spinach leaves cooked with potatoes is a semi-wet vegetable with rotis, a few spinach leaves thrown in with mixed vegetables and turned into a soup is lovely on a cold winter night, chopped and blanched spinach makes a different sort of raita, spinach puree can be used in cutlets or kababs, the list goes on.

Ingredients for Lasagna Rolls Recipe

  • Spinach leaves (palak) blanched and chopped ½ small bunches

  • Mozzarella cheese grated ½ cup

  • Parmesan cheese grated 2-3 tablespoons

  • lasagna sheets blanched 4

  • Oil 1 tablespoon

  • Garlic chopped 1 tablespoon

  • Salt to taste

  • Crushed black peppercorns to taste

  • Ricotta cheese ¼ cup

  • Tomato sauce readymade as required

Method

Step 1

Preheat oven to 180º C.

Step 2

Heat oil in a non-stick pan. Add garlic and sauté for 30 seconds. Add spinach and mix.

Step 3

Add salt, mix and cook for 1 minute. Add crushed peppercorns, mix and cook for 30 seconds. Remove from heat and cool.

Step 4

Add ricotta cheese and mix. Fill a piping bag with spinach-cheese mixture.

Step 5

Place each lasagna sheet on the worktop and cut into half horizontally. Pipe out spinach-cheese mixture on each strip, spread and roll.

Step 6

Line a glass baking tray with lasagna rolls and spread some tomato sauce on top. Put mozzarella cheese and parmesan cheese on top.

Step 7

Put the dish on a baking tray, place the tray in the preheated oven and bake for 10-15 minutes.

Step 8

Serve hot.
