Lasagna Rolls

Ingredients
- ½ small bunch spinach leaves (palak), blanched and chopped
 - ½ cup grated mozzarella cheese
 - 2-3 tablespoons grated parmesan cheese
 - 4 lasagna sheets, blanched
 - 1 tablespoon oil
 - 1 tablespoon chopped garlic
 - Salt to taste
 - Crushed black peppercorns to taste
 - ¼ cup ricotta cheese
 - Readymade tomato sauce as required
 
Method
- Preheat oven to 180º C.
 - Heat oil in a non-stick pan. Add garlic and sauté for 30 seconds. Add spinach and mix.
 - Add salt, mix and cook for 1 minute. Add crushed peppercorns, mix and cook for 30 seconds. Remove from heat and cool.
 - Add ricotta cheese and mix. Fill a piping bag with spinach-cheese mixture.
 - Place each lasagna sheet on the worktop and cut into half horizontally. Pipe out spinach-cheese mixture on each strip, spread and roll.
 - Line a glass baking tray with lasagna rolls and spread some tomato sauce on top. Put mozzarella cheese and parmesan cheese on top.
 - Put the dish on a baking tray, place the tray in the preheated oven and bake for 10-15 minutes.
 - Serve hot.
