Ingredients list for Khajure

  • 2 cups Milk
  • 1 1/4 cups Refined Flour
  • 1 3/4 cups Sugar
  • 2 cups Refined flour (maida)
  • 1 1/4 cups Ghee
  • to deep fry Oil

Method

  1. Boil the milk in a medium sized thick-bottomed pan and let it cool completely. Sieve the refined flour. In a large bowl mix milk, semolina, sugar, refined flour, ghee and knead to a stiff dough using some more milk if needed.
  2. Take out small portions from the dough, each the size of a small lime and press with closed fingers to form a small oblong with impressions of the fingers.
  3. Heat sufficient oil in a kadai and deep fry on medium heat till golden brown and crisp. Let cool completely and store in an airtight tin.
