Ingredients list for Kale and Couscous Fritters
- 1 cup Kale leaves shredded
- 1/2 cup Couscous
- 1/2 cup Processed cheese grated
- 1/2 teaspoon Mixed herbs dried
- 1/4 teaspoon Red chilli flakes
- 1 tablespoon Cornflour/ corn starch
- 1/4 cup Bread crumbs fresh
- to taste Salt
- 1/4 teaspoon Crushed black peppercorns
- for deep-frying Oil
Method
- Take couscous in a bowl, add one cup warm water, cover with a cling film and set aside till the grains are cooked.
- Remove the cover, fluff up the grains with a fork and add kale, cheese, mixed herbs, chilli flakes, cornflour, breadcrumbs, salt and crushed peppercorns and mix well.
- Heat sufficient oil in a pan. Drop small portions of the couscous mixture into the hot oil and deep-fry till golden. Drain on absorbent paper.
- Serve hot.
