Ingredients list for Jam Cookies

  • 100 grams Refined flour
  • 60 grams Castor sugar
  • 1/4 cup Butter
  • 1/2 teaspoon Vanilla essence
  • 30 grams Cornflour
  • 2 tablespoons Milk
  • as required Pineapple jam

Method

  1. Take castor sugar in a bowl, add butter and beat with an electric beater till light. Add vanilla essence and beat well.
  2. Sift together refined flour and cornflour into the bowl. Add milk and mix till well combined into a dough. Wrap the dough in cling wrap and chill in the refrigerator for 2-3 hours.
  3. Preheat the oven to 180° C.
  4. Bring out the dough out of the refrigerator and roll it out into ½ cm thick sheet. Cut into roundels with a medium sized cookie cutter.
  5. Cut out center of half the roundels with a smaller cookie cutter to make rings.
  6. Spread some pineapple jam on each complete roundel, place a ring on top of each. Place them on a baking tray.
  7. Keep the tray in the preheated oven and bake for 20-25 minutes. Remove the tray from oven and let the cookies cool.
  8. Arrange them on a serving plate and serve.
