Ingredients list for Jalapeno Stuffed Baked Potato

  • 4 large Potatoes
  • 2 Jalapeno chopped
  • 1 cup Sea salt
  • 2 teaspoons Cornflour/ corn starch
  • 1 tablespoon Oil
  • 2 medium Onions chopped
  • 1 tablespoon Soy sauce
  • 2 tablespoons Tomato ketchup
  • 2 tablespoons Mayonnaise

Method

  1. Preheat the oven to 220°C. Place the whole potatoes on a bed of sea salt in a baking tray and bake in the preheated oven at 220°C for thirty to forty minutes or till done.
  2. You can also boil the potatoes but take care that they become completely dry after that. Blend cornstarch in half a cup of water.
  3. Heat oil in a pan. Add half the onions and sauté till translucent. Add soy sauce and one cup of water and mix. Add jalapeno peppers and mix.
  4. Add the blended cornstarch and cook stirring continuously till a sauce consistency is reached.
  5. Halve the baked potatoes and scoop out the centres leaving a thin shell around.
  6. Take the scooped out portions in a bowl. Add the remaining onions, tomato ketchup, mayonnaise and mix well.
  7. Put this filling into the potato cases. Pour the sauce over and lightly mix the filling. Serve hot.
