Ingredients list for Jalapeno Potato Cups
- 2-3 Jalapenos seeded and finely chopped
 - 20-24 Baby potatoes
 - for deep-frying Oil
 - ¼ cup Cheddar cheese grated
 - 2 tablespoons Mozzarella cheese grated
 - 1 teaspoon Red chilli flakes
 - to taste Salt
 - to taste Crushed black peppercorns
 
Method
- Preheat oven to 180° C.
 - Halve the baby potatoes. Scoop out the flesh in a bowl. Reserve the shells and flesh.
 - Heat sufficient oil in a pan. Deep-fry potato shells till golden. Drain on absorbent paper.
 - Put cheddar cheese, mozzarella cheese, jalapenos, red chilli flakes, salt and crushed peppercorns in another bowl and mix well.
 - Stuff fried shells with cheese mixture and place on a baking tray. Place the tray in the preheated oven and bake for 10-15 minutes.
 - Serve.
